Tamarind Jerk BBQ
Smoky, sticky and tamarind-sharp, with a proper Jamaican jerk backbone. The one that tastes like the barbecue.
Mango Scotch Bonnet
Sweet mango up front, real scotch bonnet on the finish. It creeps up — order a drink with it.
Coconut Lime Crema
Cool coconut cream with a bright lime lift. The one that calms everything down.
How we cook it
One cut of wing. One way of doing things. No freezer, no heat lamp, no shortcuts.
THE RUB
Our own Jamaican spice blend, mixed by us. Rubbed into every flat before it goes anywhere near the fryer.
THE FRY
A light batter. Peanut oil at proper temperature. Fried fresh to order. Your flats don't exist until you order them.
THE FINISH
One sauce, chosen by you. Spring onions or sesame on top if you ask. Straight into your hands.
PEANUTS
All chicken is fried in peanut oil. If you have a peanut allergy, our kitchen is not safe for you. We would rather lose an order than take that risk.
GLUTEN
No wheat and no gluten in the recipe. If you are coeliac, talk to us before you order and we will tell you straight.
SESAME
Sesame seeds are an optional topper, added only on request. They do live in our kitchen.
